


Zucchini Fritters
Crispy on the outside and tender on the inside, these Zucchini Fritters are a fresh, savory snack you’ll want to make again and again. Shredded zucchini and hash browns are mixed with green onions, a touch of lemon, and just enough flour to hold them together. Lightly pan-fried until golden, they’re perfect for serving hot and fresh with your favorite dipping sauce.

Zucchini Fritters

Ingredients
1 medium zucchini, grated (about 1 1/2 cups)
1 1/2 cups Simply Potatoes® Shredded Hash Browns
2 green onions, thinly sliced (about 1/4 cup)
1 tsp granulated sugar
1/2 tsp salt
1 egg, beaten
2 tsp lemon juice
1/2 tsp lemon zest
1/4 cup all purpose flour
1 Tbs olive oil, plus more as needed
1 Tbs unsalted butter, plus more as needed
Directions
- Combine the zucchini, hash browns, onions, sugar and salt in a medium mixing bowl. Toss to combine. Add the egg, lemon juice and lemon zest. Stir until well-incorporated. Add the flour, mixing well. Heat 1 tablespoon of oil and 1 tablespoon of butter in a large cast-iron or nonstick skillet.
- Once the butter is melted and oil is hot, drop the zucchini mixture in tablespoonfuls into the skillet. Make sure not to crowd the pan. Cook for about 1 minute on each side until browned and semi-firm. Transfer to a plate lined with paper towels to drain. Repeat with remaining zucchini mixture, adding more oil and butter as necessary. Serve hot.
